Fu Sha offers eclectic mix of Japanese cuisine

The art of cooking is well-known to Cindy Zheng and Mr. Lin. While preparing to own their own restaurant, Cindy and Lin spent 11 years cultivating their skills while working at several restaurants in New York City. They also both had worked in their respective family restaurant businesses. Now, Cindy and Lin's talents and creations can be experienced at the new Fu Sha Japanese Restaurant in Parsippany.
"We have made New Jersey our home and this is our first restaurant together," Huang said.

As a master sushi chef, Lin brings explains that creating various types of sushi, sashimi, and hand-roll combinations requires a great deal of knowledge, experience and skill to ensure the right blend of tastes. Lin and Huang are pleased to display some of the accolades they have received from their customers, particularly those about the freshness and quality of the food.

"We work with a company that imports Japanese fish fresh every day and we use them because we know their reputation very well," Huang said.

The menu includes sushi, sashimi and roll choices, of which many are Lin's own innovations, such as the spicy crawfish and avocado hand roll, the tofu-skin cucumber roll (vegetarian), tuna dumpling and pepper tuna tataki.

Sushi and sashimi are available a la carte as well as in entrees with a soup or salad included. There are plenty of soups, salads and hot and cold appetizers to choose from. Other Japanese entrees include classic teriyaki dishes available with a large selection of meats, fish, seafood, and vegetables, a sort-of make-your-own combo. Additional items include tempura or noodle entrees with a choice of soba or udon, as well as a variety of specialty rice dishes.

A special-priced lunch menu including sushi bar items also is available.

All of this happens in an eclectic Manhattan-style setting. The shades in the dining room are of tans, browns and blacks. The wallpaper has embossed Japanese symbols, but the most attention-grabbing feature in the room is a large light display on the wall that softly changes colors and adds dimension.

"We want to thank the community for supporting us, and we are always working to do well by the customers," said Zheng.
